Chef Coble taught the ProStart students how to butcher lobster, He went through the steps of how to take the lobster apart. The first thing he did was take a knife and kill the lobster. The next thing his did was remove the claws. After removing the claws he removed the tail by raping a towel around it and twisting the tail off. Next he pulled off the legs also by twisting them. The last thing he does is remove the shell off the back of the lobster and showed everybody the pigment that usually turns the lobsters red when you boil them. He didn’t cook the lobster he just showed them how to disassemble it to cook it.
